9-in unbaked vegan pie shell
2 8 oz. containers vegan cream cheese
2 tbsp soy milk
1 cup natural sugar (or choice of sweetener)
1 tsp vanilla
2 tsp grated lime peel
4 tbsp lime juice
2 tbsp cornstarch
sliced strawberries

Directions

1. preheat oven to 350 degrees.

2. blend cream cheese, soy milk, sweetener, vanilla, grated lime peel, lime juice and cornstarch until smooth.

3. pour mixture into unbaked vegan pie shell and bake for 40 minutes.

4. let cool to room temperature and refrigerate. top with sliced strawberries and serve.
