A good change from plain ham and cheese and a good way to use leftover ham.

Ingredients

1 cup minced ham
1/2 cup grated apple, tossed with
1 tsp. lemon juice
2 Tbsp. mayonnaise
1 Tbsp. Dijon-style mustard
1 Tbsp. sweet butter
8 slices dark rye bread
8 thin slices Swiss cheese
8 thin slices tomato

Directions

Combine ham, apple (drained), mayonnaise and mustard.

Lightly butter the bread. Evenly spread ham mixture on 4 slices. Add cheese and tomato slices.

Top with remaining bread slices. Cut sandwiches in half before serving.

Comments

Good served with: A tossed green salad with chunks of apples and walnuts, sparkling apple cider or a cold beer, if desired.
