There is nothing quite so marvelous as stuffed avocado halves to tempt the palate.

Ingredients

3 hard-cooked eggs. chopped
2 stalks celery, chopped or 1/2 cup chopped cucumber
2 avocados, halved and pitted
Lemon juice
Paprika

Directions

Combine the eggs and celery or cucumber in a bowl.

Brush the avocado halves with lemon juice to prevent darkening.

Prepare the dressing by combining all ingredients in a separate bowl until well blended.

Combine egg mixture with dressing.

Fill avocado halves with the egg filling. Sprinkle with paprika. Serve with tomato slices and lettuce leaves.

Comments

Tips: An easy way to cut an avocado in half is to cut all around the avocado lengthwise, then twist in opposite directions to separate the 2 halves. Strike the pit with a heavy knife and twist to remove.
